6 cups chicken stock
2 green plantains peeled and coarsely grated
1 small yellow onion chopped
1 tablespoon annatto oil
3 garlic cloves minced
salt and black pepper to taste
Procedure: Combine all of the ingredients in a large soup pot and bring to a simmer.
Reduce the heat to low and cook, stirring occassionally, until the plantain is tender about 20 minutes.
