2 cups coconut milk
3 cups pineapple juice
2 cups crushed pineapple
1/2 cup shredded sweetened coconut
1 cup golden rum
1/2 cup sugar
1/2 teaspoon vanilla extract
about 2 cups ice cubes
fresh mint leaves for garnish
Procedure: In a bowl, combine all of the ingredients except the ice and mint leaves. Mix in batches with the ice in a blender. Garnish with mint leaves.
