Recipe Chicken Spanish Rice
|
Ingredients:
4 Skinless Chicken Breasts
1/4 cup sliced almonds
2 tablespoons olive oil
2 cloves garlic, minced
2 cups chicken broth
1 package (5.6 ounces) Spanish rice mix
Chopped parsley (for garnish) |
Procedure:
Heat large skillet over medium heat. Cook and stir almonds 1 minute or until golden. Remove from skillet; set aside.
Heat oil in skillet over medium high heat. Add garlic and chicken breasts; sauté 1 minute per side. Stir in chicken broth and bring to a boil. Stir in rice mix.
Reduce heat to medium low. Cover; cook 8 to 10 minutes or until juices run clear and a thermometer inserted into center of chicken breast registers 170°F. and rice is tender.
Sprinkle with reserved almonds and chopped parsley, if desired.Enjoy!!!
