Recipe Chicken Casserole
|
Ingredients:
6 Fresh Chicken Legs
1 teaspoon salt, divided
1/2 teaspoon ground pepper, divided
2 tablespoons olive oil, divided
3 medium potatoes, peeled and cut into large chunks
2 large tomatoes, seeded and cut into large chunks
2 large onions, coarsely chopped
1/2 cup whole almonds
1/2 cup pinenuts
2 teaspoons chopped fresh parsley
2 teaspoons chopped fresh thyme
1 chicken flavored bouillon cube
1/2 cup boiling water
1/2 cup dry white wine
2 tablespoons lemon juice
4 cloves garlic, minced |
Procedure:
Preheat oven to 375°F.
Season chicken with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Sprinkle 1 tablespoon of the oil in the bottom of a large casserole. Place chicken, potatoes, tomatoes, onions, almonds and pinenuts in a large casserole or baking pan.
Sprinkle parsley and thyme evenly over ingredients in pan.
Dissolve bouillon cube in the boiling water, in a small bowl. Add wine, lemon juice, garlic, the remaining 1/2 teaspoon salt, the remaining 1/4 teaspoon pepper and the remaining 1 tablespoon of oil.
Drizzle mixture evenly over all of the ingredients.
Bake 1 hour and 15 minutes or until chicken is fully cooked.Enjoy!!!
