Recipe Chicken Cazuela
|
Ingredients:
4 Skinless Chicken Breasts
4 cloves garlic, minced
1/2 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon ground pepper
1/4 cup of 1 bitter orange juice
or 2 tablespoons each lime juice and orange juice
1 large onion, sliced into rings
1/4 cup olive oil
2 medium carrots, peeled and diced
1/4 cup dry white cooking wine
1/2 cup peas |
Procedure:
Combine garlic, cumin, oregano, salt and pepper in a small bowl. Spread mixture on chicken breasts. Sprinkle with juice and top with onions. Cover and marinate in refrigerator about 1 hour. Reserve marinade.
Heat oil in a large skillet over medium heat. Sauté chicken breasts 2 minutes per side until brown. Add reserved marinade, carrots and cover.
Reduce heat and simmer 15 minutes. Stir in wine and peas. Cook 5 minutes longer or until chicken is fully cooked.
